Ebi doria (rice gratin with shrimps) - エビドリア

Ingredients : 
For 4 people
 
For the gratin:
- 350g of round rice (Japanese rice)
- 2 tablespoons of butter
- 400g of peeled shrimps
- 1/2 onion
- salt pepper
- grated cheese
For the béchamel:
- 33g of butter
- 33g of flour
- 40 cl of milk
- salt, pepper, nutmeg


Preperation : 
 
- Rinse and cook your rice.
- Prepare the béchamel: melt the butter in a saucepan, then add the flour and stir while letting it cook. When the mixture boils, gradually add the milk while stirring, so that the preparation thickens. Salt and pepper, sprinkle with nutmeg.
- Remove the casing from the shrimp, cut them in half if necessary.
- Chop the onion
- In a frying pan, heat the butter and brown the onion over low heat until translucent.
- Add the prawns. Brown the whole.
- Pour the béchamel over it, add salt and pepper and mix everything together. Cover and simmer over very low heat for 10 minutes.
- In a gratin dish, put the rice then the shrimp mixture. Sprinkle with grated cheese.
- Bake at 200 ° C for 10 minutes.
 
You can also add carrots, baby weights or mushrooms to your rice / onion mix and cook the whole thing.
