Ebi tempura (fried shrimp fritters) - 海老の天ぷら

Ingredients :
For 4 people
- shrimp
- 100g of sifted flour
- 1/2 teaspoon baking powder
- 1 egg yolk
- 15 to 20 cl of cold water
- sunflower oil
- salt pepper

Preperation :
- Put the water in the refrigerator.
- Shell the shrimp, keeping the tail.
- In a salad bowl, using a whisk, beat the egg yolk and water, add the sifted flour.
- Mix until you obtain a fluid dough.
- Dip the shrimp in the dough.
- In a saucepan, heat the oil.
- Place them in the oil (with chopsticks). Leave to cook until golden brown.
- Drain them in a colander then place them on baking paper.
- Serve while hot.
